Depending on which university you wish to apply, minimum requirements could vary. There are also two ways of applying: either you do all the things on your own or you do it through a well-known agent if available.
Following things you are most likely to submitt:
- An English language certificate: Cambridge, IELTS oder TOFEL. As much as I know, Canada and US prefer TOFEL over IELTS. I myself did IELTS for within Europe.
- Minimum two letter of references, preferably academic ones. In some cases one academic and one from your employer. What exactly is expected in such references varies from uni to uni. Some provide you with a form or with certain guidlelines, which you need to pass on to your professor etc. What you also need to know is that most of the universities now prefer online applications and submission of documents. Since in most cases the references need to be sealed, there are three possibilities: either your professor sends a direct e-mail to the relevant department, submits the document online (as s/he gets an invitation to do so from the uni) or in some cases you yourself are allowed to submit the reference.
- Work experience is required in some cases, mostly 2-3 years.
- CV is in some cases obligatory and in some optional.
- Motivation letter
- The application form
- Photos in some cases
- Passport and Visa details
- Scholarship - however, mostly if you want to apply for scholarship the deadline for application is different (mostly much earlier)
- Original transcript (academic record if you are not finished with your studies yet). If this transcript is in any other language than English, a certified translated copy is needed.
- Copy of your degree
Hmm, this is all what I can come up with.
As for how to find the right program - that totally depends on which course you are looking for, where you want to live, how much you can afford, how much reputation matters, etc. You can google for 'best MBA prog./unis' and make a list: what are the requirements, deadlines, etc.

P.S. if you did your Bachelors in Economics, I certainly wouldn't suggest you to do a MBA. MBA is rather for those who do not have any prior knowledge in the field of economics, etc.

As for Canada, the only thing I know is that good unis there have their deadline in Jan already (even though the course itself might start in Sept): McGill (personally, my fav.), Tronto, York and Queens.
